Chick Peas are all the rage.

Every where you go you can find chick peas, garbanzo beans, hummus....falafel.
It's all the same thing and it's big foodie news.  Right up there with ...icky kale.

But I have a recipe from about 1990.
You know.  Last century.

When we lived in Marinette, when the children were young, my next door neighbor for the first few years was a young mom named Ann.  Ann went to kindergarten with Patrick.  She and Tom had children about the same age as ours.  In fact Erin and Emma are only two weeks apart.

For a while there, Ann and I would get together for lunch.  We would make recipes we found in magazines and in the newspaper.

Ann made this Greek Chick Pea salad and wrote out the card for me.  I loved it right away.



Greek Chick Pea Salad
 2 cans chick peas- rinse and drain
2 med. tomatoes, cored, chopped
1/2 cup red pepper
(green pepper too...but I hate it)
4 scallions - trimmed and chopped
1/4 cup Greek olives- halved
1/4 C. chopped parsley
1 T. chopped fresh oregano
1/2 c. olive oil
3 T. balsamic vinegar
Salt to taste
Pepper to taste


Good and good for you.

p.s.  I told Emma that chick peas make 'one' gassy.
She said, they make everyone gassy.

  6. Being married to a vegetarian, chick peas are very popular with us! I always add them to chili, or slow roast with garlic and herbs and smear with feta or goat cheese on really fresh baguette :-) even have a pasta dish that we love from Jamie Oliver that's the bomb.

    This dish looks beautiful and tasty, can't wait to try it!!

      Funny, you make me laugh Susan...this is a good thing!
      I started on a probiotic in January recommended to me by a family member in the medical field and the first couple of weeks were "gassy," but now three months in my colon is doing so much better. I thank God for those folks who do research and develop the medicine that helps us. The really great news about the probiotic I am taking is the coating which helps the bacteria get through the stomach and to the colon. Hooray for feeling better, even with a "gassy" beginning. love and prayers, jep

    I came here today to find your salad recipe for your Miz Crocker salad. How wonderful to find a new recipe to boot! I love chickpeas and love hummus, though Terry does not. I'll have to try this soon. Oh, and with the Miz Crocker salad, I made it for years but never bothered with the sugar on the almonds. Then one day I made the salad for a large event and the other cooks convinced me we MUST do the sugaring. OH MY. I had been missing one of the best parts all along, even though I loved the salad without. The sugared almonds take it to a level beyond LOVE.
